What it actually does
Two things. It stops wind pulling heat unevenly across the coals, which is what causes one side of a bowl to burn while the other stays cold. And it contains ash and sparks, which matters on a terrace with fabric furniture.
When you need one
Outdoor sessions, balconies, desert trips, anywhere with moving air. Indoors it also holds heat in slightly, which can let you drop from three coals to two.
Fit and use
It sits over the bowl above the foil or heat management device. Check the bowl diameter in the specifications above. Handle it with tongs once the session has started — steel conducts heat and it will be hot.
Cleaning
Let it cool, then wipe it. Ash bakes onto steel if left, so clean it while it is still warm rather than the next day.
